Bright blue chicory is pretty to look at, beautiful
in bouquets, and it is also one of the most useful of common
wild plants. Chicory is often added to coffee because it is
cheap and plentiful, and it has a delicious flavor when roasted.
In the photo here, the foliage surrounding the plant is not
the foliage of the chicory, but simply that of the surrounding
plants. Chicory usually has long spindly stems, and leaves
which hug the ground, so the most recognizable portion of it
is always its bright blue blossoms.
